    The Gillespie County Health Division only offers environmental health-related services.  For medical and immunization services, please contact your family physician or Texas Department of Health local office at (830) 997-4249.


    Food Establishment Grading System
     
    The Gillespie County Health Division is available as a service to the citizens of Gillespie County.  Part of that service is regular inspection of local eating and retail food establishments within the county.  The City Council of Fredericksburg passed a Food Establishment Regulation Ordinance on October 30, 2000.  Additionally, the Gillespie County Commissioners passed a County Order for all retail and food establishments that lie outside the city limits of Fredericksburg on December 4, 2000.  Both the City Ordinance and the County Order consist of the adoption of the Texas Food Establishment Rules.  These rules are the State minimum standards.  The purpose of these rules is to safeguard public health and provide to consumers food that is safe, unadulterated, and honestly presented.
     
    The Gillespie County Health Division must permit all retail food and eating establishments.  All establishments are inspected at least annually upon renewal of their health permit or for new businesses applying for their health permit.  The inspections are based on the Texas Food Establishment Rules.  A demerit system that parallels with the current Texas Department of Health retail food inspections is used in grading a facility.  It was suggested that a more universal system be used to equate with the demerit system.  The following grade equivalencies will be used in rating our establishments instead of reporting in demerits:
     
    Grade A10 or less demerits
    Grade B11 to 20 demerits
    Grade C21 to 30 demerits
    Grade F31 or more demerits
                   
               
                5-point demerits are issued violations associated with heating, cooling, cooking
                temperatures and times, and require immediate corrective action.
     
                4- point demerits are issued for personnel, and handling violations, and require
                immediate corrective action.
     
                3-point demerits are issued for facility and equipment violations requiring
                immediate corrective action not to exceed 10 days.
     
    If a facility has more than 30 demerits, a re-inspection will follow within at least 10 days.  Both the original inspection and the follow up inspection will be reported simultaneously.  The Gillespie County Health Division will keep these reports updated every two to three weeks and will be available on the City of Fredericksburg web site at www.fbgtx.org and will also be available at the receptionist desk on the second floor at City Hall and at the Commissioners office in the Gillespie County Courthouse.
