The Gillespie County Health Division is available as a service to the citizens of Gillespie County. Part of that service is regular inspection of local eating and retail food establishments within the county. The City Council of Fredericksburg passed a Food Establishment Regulation Ordinance on October 30, 2000. Additionally, the Gillespie County Commissioners passed a county order for all retail and food establishments that lie outside the city limits of Fredericksburg on December 4, 2000. Both the city ordinance and the county order consist of the adoption of the Texas Food Establishment Rules. These rules are the state minimum standards. The purpose of these rules is to safeguard public health and provide to consumers food that is safe, unadulterated, and honestly presented.
